Aleppo Roasted Carrots with Lemon Whipped Feta

Ingredients
For the Carrots:
1 pound carrots. We like using the les petit carrots of many colors from Trader Joes. Or use the equivalent from your local farmers market.
3 tablespoons Olive Oil
1 tablespoons pomegranate molasses or honey
1 teaspoon Peppered Earth Aleppo Chile Powder
1 teaspoon Cumin
1/2 teaspoon Peppered Earth Sweet Paprika
1/4 teaspoon Cinnamon
Sea salt and black pepper to taste
For the Whipped Feta:
8 Ounces feta cheese in brine
1 cup greek yogurt
1 lemon, zested and juiced – this is about 3 tablespoons
3 tablespoons Olive Oil
2 cloves garlic
Salt to taste
Garnish :
1 tablespoon fresh parsley, chopped
½ teaspoon Peppered Earth Aleppo Flake
1 drizzle olive oil
1 tablespoon pomegranate seeds
Instructions
Preheat your oven to 425 F. Wash carrots and add them to a large bowl. Season with olive oil, pomegranate molasses, and all the seasonings: Peppered Earth Aleppo Chile Powder, cumin, paprika, cinnamon, sea salt, and black pepper. Use your hands to toss the carrots and fully coat them in the seasoning blend.
Roast the carrots on a sheet pan for about 15 minutes, until they are fork tender, flipping them about halfway through.
While the carrots are in the oven, prepare the whipped feta by adding the crumbled feta cheese, Greek yogurt, lemon juice, lemon zest, olive oil, and garlic to a food processor and blending them until the feta reaches a smooth and creamy texture. If it gets too thick, add a small amount of the feta brine as needed to reach your desired consistency. Taste and add salt as needed.
Spread the whipped feta nicely over a large serving plate. You might have extra whipped feta depending on how much you would like to use. That’s OK. Save it as a delicious and healthy snacking dip!
Arrange the carrots on top of the whipped feta. Garnish with a healthy drizzle of olive oil, some chopped parsley, Peppered Earth Aleppo Flake, and pomegranate seeds.
