Corn Bread with Green Chiles

Flavorful cornbread to complement any meal. Add cheddar and bacon for even more flavor.

Ingredients

1 cup cornmeal  
1 cup flour
1/4 cup sugar
1 Tbsp. baking powder
1/2 tsp. salt
2 eggs, lightly beaten
1 1/4 cups milk
1/3 cup vegetable oil
3 Tbsp. butter, melted
1/2 cup sweet corn kernels
8 oz. green chiles, roasted, peeled, seeded and diced

Optional: Grated cheddar cheese & crumbled crispy bacon

Instructions

Preheat oven to 375 degrees. Combine cornmeal, flour, sugar, baking powder and salt in a large mixing bowl.

Combine eggs, milk, vegetable oil, butter, corn and chiles in a medium mixing bowl.  Mix well. Add the egg mixture to the dry ingredients. Mix until just combined.
Pour into a greased 8” square baking pan. Bake for 20 minutes or until a toothpick or knife inserted into the center comes out clean.
 
Variations: Add grated cheddar cheese and/ or bacon crumbles before baking.
